Soup for a cold day

It is so cold today that soup is needed, so here is one of our favorites here at Cranberry acre. This recipe can be done in the crock pot or in a Dutch oven, I have done both.

Taco Soup

Ingredients

1 ( 16oz) can of chili beans
1 ( 15oz) can of black beans
1 ( 15oz) can of corn drained ( or 1 1/2 cups of frozen corn)
1( 8oz) can of tomato sauce
1( 12 fl oz) can or bottle of beer ( I have found that the darker it is the better the taste, just hate to put in soup)
2 (10oz) can died tomatoes w/green chilies( or 3 to 4 tomatoes diced up w/ 2 jalapeno peppers)
1(pkt) taco season( or if you make your own 2 to 3 teaspoon, depending on your taste)
3 skinless boneless chicken breasts ( or 6 to 8 thighs)
1 onion chopped

When you are done with the soup you will add
shredded cheddar cheese, sour cream, and the best of all tortilla chips crushed up

Directions

If crock pot : put all ingredients in the crock pot set to low and cook for 5 hours!
You will remove chicken and shred it. You then will put back into the soup and cook for another 2 hours.
If Dutch Oven: You will do the same with adding all ingredients. Set oven to 275 degrees, Put Dutch oven in and wait 4 to 5 hours. Repeat directions up top with shredding chicken.
Put back in soup, and put back in oven for 2 hours.
When serving this we always crush the chips and place on the bottom of the bowl. We then add the soup on top. Add cheddar if you want and sour cream!
Hope you enjoy this.
